Description
Food safety definitions and concepts. Food safety along the food chain. Food safety, globalisation and trade. Relationships between food safety and biosecurity. Food safety hazards: primary sources, characteristics, adverse health effects, implicated foods and control measures. Risk Analysis. Food Safety Risk Assessment. Food Toxicology. Foodborne diseases. Foodborne disease surveillance. Epidemiology of foodborne disease outbreaks linked to agricultural production practices. The role of good agricultural practices (GAP) in produce safety. Animal health/production and Food Safety. The significance of food hygiene throughout the food chain to ensure food safety. Pre-requisite Programmes (PRPs) and food safety management systems. The application of HACCP (Hazard Analysis Critical Control Points) principles to agricultural production. Food fraud. Traceability and control of the supply chain. Food Standards and Food Laws. Food Protection and Defense.
